Tonight I tried a couple of new recipes combined with some old favorites.
Caribbean Rubbed Pork Chops with Mango Salsa, Roasted Sweet Potatoes, and Poppyseed Mandarin Orange Salad This was a delicious meal packed with fruits and veggies and just the right amount protein.

Caribbean Rubbed Pork Chops with Mango Salsa

Pork Chops with Caribbean Rub and Mango Salsa
Recipe from Cooking Light October 2011
Ingredients
1 1/2 tsp ground coriander
1 1/2 tsp ground cumin
3/4 tsp sugar
3/4 tsp ground ginger
1/2 tsp salt
1/4 tsp ground allspice
1/8 tsp ground red pepper
4 (6 oz) bone-in center cut pork chops (about 1/2 in thick)
1/2 cup diced peeled mango
1/2 cup diced plum tomato
1/2 cup chopped cilantro
1 tablespoon red wine vinegar
2 tsp extra virgin olive oil
Directions
1. Combine first 7 ingredients in a small bowl. Rub pork chops with spice mixture.
2. Heat a grill pan over medium-high heat. Coat pan with cooking spray. (Or heat an outdoor bbq grill and lightly brush grates with vegetable oil) Add pork to pan; grill 3 minutes on each side or until a thermometer registers 145° (slightly pink.)
3. Combine mango, tomato, cilantro, red wine vinegar, and olive oil in a small bowl; toss gently. Serve salsa over pork.
Fyi: 1 chop and 1/4 cup salsa chimes in at only 197 calories and 7 grams fat. Eat up!
